Organic Vegetables and Herbs Winklhofer

“Enjoy nature with a good conscience”

With this goal in mind, Sabine, Johann, and Tobias Winklhofer have been running their nursery for four generations.
On the outskirts of the city of Salzburg, in Wals – at the foot of the Untersberg mountain – the Winklhofer family team cultivates 7 hectares of open fields and 3,000 m² of greenhouses.

In the open fields, around 60 different types of vegetable crops are sown and planted. Inside the greenhouses, a wide variety of herbs and young vegetable plants thrive – including many rare and heirloom varieties.

Working with nature means saying no to pesticides – and instead relying more on beneficial insects, organic fertilizers, and microorganisms.
By cultivating a variety of cover crops, the Winklhofer family actively supports the natural buildup of humus in the soil. In doing so, they give their soil – the very foundation of their livelihood – the time it needs to regenerate, rather than depleting it.

Biodiversity and healthy, high-yielding plants

All vegetable and herb plants that were not directly sown were grown and supplied by the Winklhofer family and their team. Among them are 20 rare tomato varieties specially selected for the Tomato Terrace – a vivid example of edible and productive organic biodiversity.

The Winklhofers’ selection of culinary, tea, and medicinal herbs is truly impressive: an astonishing 250 varieties are available. Many of them are also planted along the herb trails and in the culinary herb beds at the Lumberjack.
